Description

Baltic-inspired comfort food: tender beef flat iron steak paired with ginger root and shallot and orzo, finished with sage and epazote and a hit of caraway seed and za'atar. 1. Pat the beef flat iron steak dry and season with salt, caraway seed and za'atar. 2. Heat vegetable shortening in a heavy pan and braise the beef flat iron steak until it develops a deep golden crust, about 23 minutes. 3. Add ginger root and shallot to the pan and cook until just tender, stirring in sage and epazote for fragrance. 4. Cook the orzo separately according to type until tender, then combine with the pan juices. 5. Finish with a generous drizzle of worcestershire sauce before serving hot.
