Description

Thai-inspired comfort food: tender sablefish fillet paired with green onion and jalapeño pepper and pinto beans, finished with basil and chervil and a hit of old Bay seasoning. 1. Pat the sablefish fillet dry and season with salt, old Bay seasoning. 2. Heat margarine in a heavy pan and roast the sablefish fillet until it develops a deep golden crust, about 12 minutes. 3. Add green onion and jalapeño pepper to the pan and cook until just tender, stirring in basil and chervil for fragrance. 4. Cook the pinto beans separately according to type until tender, then combine with the pan juices. 5. Finish with a generous drizzle of aioli before serving hot.
