Basque-inspired comfort food: tender bluefish fillet paired with chayote squash, turnip and arugula and soybeans, finished with cilantro and kaffir lime leaf and a hit of nutritional yeast and asafoetida. 1. Pat the bluefish fillet dry and season with salt, nutritional yeast and asafoetida. 2. Heat sesame oil in a heavy pan and sauté the bluefish fillet until it develops a deep golden crust, about 23 minutes. 3. Add chayote squash, turnip and arugula to the pan and cook until just tender, stirring in cilantro and kaffir lime leaf for fragrance. 4. Cook the soybeans separately according to type until tender, then combine with the pan juices. 5. Rest briefly, taste, and adjust seasoning before serving hot.
