Description

Deeply sweet, slowly caramelised onions under a lid of melted cheese. Don't rush the onions: the colour is the flavour. 1. Slice the onions thinly and cook them in the butter over low heat for 40-45 minutes, stirring now and then, until deep golden brown. 2. Sprinkle in the flour and stir for a minute, then pour in the wine and let it bubble away. 3. Add the stock, thyme and bay leaf and simmer for 20 minutes. Season with salt. 4. Pour the soup into an ovenproof bowl, top with a slice of toasted baguette and the grated cheese. 5. Grill until the cheese is bubbling and browned.
