Description
Tender turkey wing paired with swiss chard and salsify and teff, finished with lovage and a hit of cardamom and celery seed. 1. Pat the turkey wing dry and season with sea salt, cardamom and celery seed. 2. Heat vegetable shortening in a heavy pan and grill the turkey wing until it develops a deep golden crust, about 14 minutes. 3. Add swiss chard and salsify to the pan and cook until just tender, stirring in lovage for fragrance. 4. Cook the teff separately according to type until tender, then combine with the pan juices. 5. Shave roquefort cheese over the top just before serving.
